Pasta Salad - DELISH!

What you need:

1 Box of your favorite Pasta

10-15 halved Cherry tomatoes

1 Cup "noodled" Zucchini

1 Cup kale

1 Cup Pea shoots

Handful of Pine nuts

1/4 cup Olive Oil

2-3 Garlic cloves, chopped

Salt and pepper to taste

Cook pasta as directed on box. Once it's done drain, and rinse...set in a big bowl.

While the pasta is boiling...get a fry pan and slightly saute, garlic, kale and zucchini noodles in about 1 tablespoon of grapeseed oil. Pour over pasta. Add cherry tomatoes, pea shoots and your 1/4 cup olive oil. Add salt and pepper to taste.


Go back to your frying pan and slightly brown your pine nuts. Add these to your pasta salad.

Serve Warm or Cold.
